Marshmallows and the Rock Hibiscus!

Some of the most eye-popping flowers arrive on members of the Mallow Family! It is hard to imagine they have anything to do with the marshmallows that campers cook on sticks, but they do! Mucilage, from the roots of the plant is mixed with eggs & sugar to make marshmallow!  As a shortcut to the French invention, gelation is usually substituted for the mucilage and eggs, but the original is probably better!
